Ingredients:
- 2 bananas (1 mashed and the other to put on top)
- 4 large eggs
- 1/2 tsp vanilla
- 3 cups of almond flour
- 1/2 cup of sugar substitute I used swerve granular
- 2 tsp of baking powder
- 1/4 tsp of salt
- 1 tbsp of pumpkin spice
- Freshly grated nutmeg
Directions:
- Preheat the oven to 350, in a bowl mash 1 banana mine was 1/2 cup of mashed banana, whisk in eggs, sugar and vanilla.
- On the same bowl sift flour, salt, spices, baking powder and incorporate with a spatula, don’t over mix.
- Bake in an already sprayed loaf pan, I also cut one banana in half and layed on top to make for a nice decoration.
- Bake for 50 mins or until an inserted toothpick comes out clean, let cook for a bit then take out of the pan and serve when cooled completely.
This could be a low carb bread in-spite of the existence of the banana, unless you eat the whole thing then we are in trouble.
