Super Moist Banana Bread “Free of Regular Flour & Free of Refined Sugar”

Ingredients:

  1. 2 bananas (1 mashed and the other to put on top)
  2. 4 large eggs
  3. 1/2 tsp vanilla
  4. 3 cups of almond flour
  5. 1/2 cup of sugar substitute I used swerve granular
  6. 2 tsp of baking powder
  7. 1/4 tsp of salt
  8. 1 tbsp of pumpkin spice
  9. Freshly grated nutmeg

Directions:

  1. Preheat the oven to 350, in a bowl mash 1 banana mine was 1/2 cup of mashed banana, whisk in eggs, sugar and vanilla.
  2. On the same bowl sift flour, salt, spices, baking powder and incorporate with a spatula, don’t over mix.
  3. Bake in an already sprayed loaf pan, I also cut one banana in half and layed on top to make for a nice decoration.
  4. Bake for 50 mins or until an inserted toothpick comes out clean, let cook for a bit then take out of the pan and serve when cooled completely.

This could be a low carb bread in-spite of the existence of the banana, unless you eat the whole thing then we are in trouble.
